Heritage is important to us all. The rich cultural tapestry that Ireland has to offer was the inspiration for Rachel Gaffney's Authentic Irish Goods. Growing up in Cork City, Southern Ireland, my mother frequently made traditional butter shortbread for us. It was a staple at all our birthday parties. Traditional, meaning the transmission of knowledge or belief from one generation to another. The knowledge in this case being my maternal grandmother Ellen Whelan and my mother Margot Gaffney's knowledge of baking and the belief, more importantly, that things only done by

half are really not worth doing at all. The recipe for shortbread is indeed no secret; there are many available, with few ingredients, but one of the easiest to destroy.

For this melt in your mouth taste, it must and will continue to be made by hand.

Whilst shortbreads are currently the only products available here, there are indeed plans to introduce others, with a little bit of Ireland in every one.

There aren't any shortcuts if you want an exceptional product, but if you just want another product then there are indeed many shortcuts.
